An artisan food shop with a kitchen, where the stars are freshly made burrata and buffalo mozzarella, knife-sliced cured meats from the Valle d’Itria, Tuscan pecorino, bread from the Apuan foothills, and pastiera. Authenticity defines Michelangelo Panico’s threefold soul. Puglian and Neapolitan heritage run through his veins, yet he has chosen to put down roots in the land of Dante, reflected as well in the wine labels lining his shelves. A graduate of Alma, Italy’s prestigious culinary school, Michelangelo brings into his intimate space—set between Kan Yasuda’s Myomu and the Rocchetta Arrighina—the food memories inherited from his grandmothers. The ambiance is light and welcoming, like being at home. That same spirit extends to private dinners and events in Versilia’s villas. His culinary language speaks tradition fluently, yet with a subtle, deliberate touch to zucchini alla scapece, fried and marinated in vinegar; to fava bean purée and chicory; to eggplant parmigiana with a molten heart of smoked provola; and to Piedmontese Fassona beef tartare, prepared and seasoned tableside.
