A new star now shines over Forte: the one awarded by the Michelin Guide to the Sciabola restaurant and its chef, Alessandro Ferrarini. A recognition that honors both creativity and contemporary vision, where every dish originates from a meticulous selection of seasonal, locally sourced ingredients, transformed into jewel-like expressions of flavor.

Set within the elegant Hotel St.Mauritius, nestled among the pine groves of Roma Imperiale, Sciabola welcomes guests into an intimate, thoughtfully designed space where natural materials and sophisticated details converse effortlessly. Vibrant lava-stone tables from Mount Etna overlook the open kitchen—the beating heart of the restaurant—or the terrace, which opens onto the pool and a garden of hydrangeas and Mediterranean scrub, creating a secluded atmosphere where dinner naturally lingers and turns into memory.

The culinary journey unfolds through three tasting menus— one dedicated to the sea, one to the land, and one entirely vegetarian—alongside a fourth “carte blanche” experience entrusted to the chef’s inspiration. Guests may also dine à la carte, shaping a bespoke experience course by course.

Originally from Lombardy yet profoundly connected to Versilia, Ferrarini balances memory and innovation with precision. Among this summer’s standout creations are a bold reinterpretation of mussel soup, layered with striking depth of flavor, a deeply personal red prawn risotto, and pigeon presented in three refined expressions.

The dining room, led by maître Mirco Plebani, delivers service marked by discretion and polish, reviving the rituals of grand hospitality. Particularly emblematic are the tableside flambé lamp preparations of select dishes and desserts—most notably the iconic crêpes Suzette—bringing the evening to a close with a touch of theatrical sophistication.

Sciabola stands not only as Forte dei Marmi’s newest star, but also as a destination drawing a growing circle of discerning diners in search of distinctive, authored, and unforgettable cuisine—a luminous meeting point of tradition and contemporary vision, poised to leave a lasting impression.
